Zu Gast bei Freakfood: Tiffany Kappeler

Die Sasou Saftbar ist eine Insel inmitten von ZĂĽrich.

Als ich das schöne Lokal an der Neugasse 41 zum ersten Mal betrat, war ich sofort eingenommen von der authentischen Atmosphäre, die von Tiffany als auch vom Interieur ausgeht. Obwohl man zügig bedient wird, kommt keine Hektik auf. Jeder Handgriff sitzt. Früchte und Gemüse werden zerschnitten, Blätter beherzt zerrissen, um dann alles in den Entsafter oder den Mixer zu geben. Und dann kommt der Handgriff der geübten Smoothie/Juice-Macherin: Mit lässiger Bewegung wird der Becher innert Sekunden randvoll gefüllt. Ohne dass etwas überschwappt.

Wer schon mal einen Smoothie oder Juice bei Sasou getrunken hat, merkt: Jeder Becher steckt nicht nur voller Vitamine und Mineralstoffe, sondern auch voller Liebe. Ja, ich muss es so pathetisch sagen, es geht nicht anders. Tiffany = LOVE. Aber nicht im gruslig-esoterischen Sinne, sondern down-to-earth und trotzdem weich, warm, mit Witz, Humor und einer Portion Selbstironie (und -reflexion).

Nun ja, ich gerate ins Schwärmen. Aber in der Schweiz sind viele Menschen ziemlich reserviert, und mein Wohlfühlquotient liegt definitiv auf Tiffany-Niveau.

Letzte Woche verbrachte ich fĂĽr das Fotoshooting einen Morgen in der Sasou Saftbar und durfte die angenehme Stimmung und die hĂĽbschen Details mit der Kamera einfangen. Dabei erfuhr ich ein wenig von Tiffany’s Leben und sie von meinem – beide sind wir glĂĽcklich, den Schritt in die Selbständigkeit gewagt zu haben.

Weil Tiffany viele Jahre in Asien und den USA gelebt hat, ist sie in der englischen Sprache zuhause. Sie spricht aber Schweizerdeutsch, und ihr Dialekt hat einen sympathischen Akzent. Den Fragebogen mochte sie dann aber lieber englisch ausfüllen, was für mich total ok ist – ich hoffe, für euch auch.

Wie wĂĽrdest du deine Food-Philosophie beschreiben?

Was hat dein Essen fĂĽr einen Stellenwert fĂĽr deine Gesundheit?
My mental, emotional and spiritual health are all affected by what I put in my body. I like to listen to what I need and I feel the most vibrant and alive when I am in tune with myself. When customers come into Sasou and ask for a juice that will give them energy, I always ask them what kind of energy they need, and I do this with myself as well. Sometimes my body needs help digesting, sometimes it needs hydrating, sometimes it needs pleasure, or fat, or something soft and warming. We are so intricate and complex!

Was gefällt dir am besten an deiner/deinen aktuellen Tätigkeit/en?
I absolutely love the Sasou customers. I am so blessed and thankful at how warm and embracing this Kreis has welcomed Sasou into their community. I love how the little girls from next door come behind the bar and make their juices with me. I heard about peoples days and what they are looking forward to. I have had people play me songs on the guitar. I love the vibrant and inspiring conversations that spontaneously happen here. It is really amazing, what the people make this place. I also love to be creative with food. I love mixing them, grinding them, cooking and blending them into tasty things. There are so many delicious things that can be made with fresh and healthy ingredients!

Wie sieht ein normaler Tag kulinarisch bei dir aus?
Every day is pretty different, although I do have my phases. I can get stuck on one smoothie and drink it every day for a month! Im at Sasou a lot, sometimes all day, so I just sort of eat whatever is around. Soup, salads, a chunk of pineapple, lots of juices and smoothies, carrot with hummus. I’m not really picky so some nuts and a cucumber is also ok. I do like to take time in the evening to cook up something nice or eat with friends.

Hast du ein Lieblingsessen?
I really love sweets, I always have! Our Sasou vegan and raw cheesecake is really hitting the spot these past few weeks! It is amazing how yummy these sweets are. They have no refined sugar, no flour or eggs or butter, but are so fulfilling and creamy!

Welche Lebensmittel hast du immer vorrätig?
Coconut Oil! It is great for raw desserts! Great for your skin! Great on bread with some salt! Perfect for removing make-up. The tastiest for oil pulling.

Wie wichtig ist Bewegung in deinem Leben?
I love my life to be in movement. Sometimes I forget that it is not only my physical body that longs to be in movement. That is when I go to a drawing class, or a meditation retreat, or just try something new.

Was spielt Entspannung fĂĽr eine Rolle in deinem Alltag?
I am still learning how to decompress after a long day.The past year has been very intense for me, with all the new experiences: owning a business and making a million mistakes along the way. I’m still trying to find ways that allow me to relax. You told me something today that was inspiring. The 10 breathe meditation technique*. I guess I’m on the right path, and that’s great because it is really important to be able to relax and let go.
